Cuisine: American
Keyword: air fryer
Servings: 2 steaks

Ingredients

  • 2 sirloin steaks (6-8 oz each)
  • 2 tablespoon olive oil
  • 2 teaspoon Dijon mustard
  • 2 cloves of garlics, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • Salt and pepper, to taste
  • 3 tbp butter, softened
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  • Preheat your air fryer to 400°F (200°C).
  • In a small bowl, mix together olive oil, Dijon mustard, minced garlic, dried thyme, dried rosemary, salt, and black pepper.
  • Pat the  steaks dry with a paper towel. Brush the tops of the steaks with the herb marinade, ensuring they are well-coated. Reserve one teaspoon of the seasoning for the herb butter.
  • Place the steaks in the air fryer basket, leaving some space between them for even cooking.
  • Air fry the steaks for 10-12 minutes for medium-rare, adjusting the time based on your desired level of doneness. For a perfect medium-rare, the internal temperature should reach around 130°F (54°C).
  • While the steaks are cooking, take the butter, reserved herb mixture and the parsley and mix together in a small bowl until well combined. Place in the refrigerator until serving time.
  • Once done, remove the steaks from the air fryer and let them rest for a few minutes before serving.
  • Serve the sirloin steaks topped with the herb butter alongside your favorite sides, such as roasted potatoes or roasted green beans.

Notes

Make sure to preheat your air fryer for this recipe. We want to create a nice sear on the bottom of the steak and the best way to do that is with a hot basket.
The 10-12 minutes will typically result in a medium rare. Add or subtract time for the level of doneness you prefer. The best way to gauge the doneness is to use a meat thermometer.
To add a deeper flavor, you can create the herb mixture in advance and place it over the meat to marinate overnight or for a couple of hours. Just place the steaks in a covered container and refrigerate with the herb mixture over the top.
Allowing the steaks to rest on a cutting board before serving and cutting will allow them to retain more of the juices and create a more tender steak.
