Air Fryer Red Potatoes

Ingredients

  • 1 ½ pounds red potatoes, washed and cubed
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • ¼ cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Chopped fresh chives for garnish

Instructions

  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • In a large bowl, toss the cubed red potatoes with olive oil, minced garlic, dried rosemary, dried oregano, Parmesan cheese, salt, and pepper until evenly coated.
  • Place the seasoned potatoes in the air fryer basket in a single layer, ensuring they are not stacked at all. If your air fryer basket is on the smaller side, cook the potatoes in batches. Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside.
  • Transfer the crispy, garlic-herb, red potatoes to a serving dish and garnish with chopped fresh chives.

Notes

When cutting the potatoes, make sure they are all relatively the same size. This will ensure that they are cooked evenly and all cooked through.
If your air fryer is small, cook the potatoes in batches. If they are stacked on top of each other then they won’t get the chance to crisp up on the exterior.
Feel free to customize the herb mixture with your favorite blend, like adding dried parsley or dried thyme.
After about the 16 minute point, keep an eye out on the potatoes because they can start to burn pretty quickly after that point.
This recipe can work with other potato varieties as well, so feel free to experiment.
