    Air Fryer Red Potatoes

    These Air Fryer Red Potatoes perfectly blend a crispy, garlic and herb-crusted exterior with a soft, tender interior. Infused with garlic, fragrant herbs and salty Parmesan cheese, these red potatoes are packed with flavor in every bite. These potatoes make a great side dish or even a snack. They are so easy to make that they'll have everyone fooled into thinking that they were roasting all day.

    When cutting the potatoes, make sure they are all relatively the same size. This will ensure that they are cooked evenly and all cooked through. This recipe can work with other potato varieties as well, so feel free to experiment.

    In a large bowl, toss the cubed red potatoes with olive oil, minced garlic, dried rosemary, dried oregano, Parmesan cheese, salt, and pepper until evenly coated.

    Place the seasoned potatoes in the air fryer basket in a single layer, ensuring they are not stacked at all. If your air fryer basket is on the smaller side, cook the potatoes in batches. Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside. After about the 16 minute point, keep an eye out on the potatoes because they can start to burn pretty quickly after that point.

    If your air fryer is small, the reason you want to cook the potatoes in batches is that if they are stacked on top of each other then they won’t get the chance to crisp up on the exterior.

    Ingredients

    • 1 ½ pounds red potatoes, washed and cubed
    • 2 tablespoon olive oil
    • 3 cloves garlic, minced
    • 1 teaspoon dried rosemary

    • ¼ cup Parmesan cheese, grated
    • Salt and pepper, to taste
