Peanut Butter Stuffed Dates

Ingredients

  • 12 large Medjool dates
  • ¼ cup creamy peanut butter
  • cup semi-sweet chocolate chips
  • Optional toppings: chopped nuts, shredded coconut, sea salt

Instructions

  • Using a paring knife, carefully make a small slit lengthwise down one side of each date. Gently open the dates and remove the pits.
  • Spoon about ½ teaspoon of creamy peanut butter into each date, filling the pocket created by the slit. Use the back of the spoon to smooth out the peanut butter and ensure even filling.
  • In a microwave safe bowl, melt the semi-sweet chocolate chips in 20 second intervals and stir until melted and smooth.
  • Drizzle each date with melted chocolate and immediately add on the toppings of your choice. You can choose one topping or use multiple toppings.
  • Optional: Place the stuffed dates on a plate or tray and chill in the refrigerator for at least 15-20 minutes to firm up the peanut butter filling and chocolate.

Notes

Medjool dates work best for this recipe due to their larger size and soft, chewy texture. However, you can use any variety of dates you prefer.
Feel free to use crunchy peanut butter for added texture, or substitute with almond butter or another nut butter of your choice.
Get creative with your toppings! Try rolling the stuffed dates in chopped pistachios, almonds, or walnuts for added crunch. You can also sprinkle with flaky salt or drizzle with honey for extra sweetness.
