Pimento Grilled Cheese Sandwich

Ingredients

  • 2 slices sharp cheddar cheese
  • 4 ounces Pimento cheese spread
  • 2 slices of Italian bread 
  • 2 tablespoon butter, softened

Instructions

  • Heat a skillet or griddle over medium-low heat.
  • Butter the outer sides of the bread slices.
  • Flip the bread and place a slice of cheddar cheese on each of the bread slices.
  • Spread a generous amount of the pimento cheese mixture, about 4 ounces, onto one slice of bread.
  • Close the sandwich and place it, buttered sides down, onto the skillet or griddle.
  • Cook the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
  • Once both sides are golden brown and the cheese is melted, remove the sandwiches from the skillet. Allow the sandwiches to cool for a minute or two before slicing them in half. Serve hot and enjoy the gooey, cheesy goodness of this Pimento Grilled Cheese!

Notes

Don't shy away from experimenting with different types of bread for unique flavor combinations. Sourdough, rye, or even a hearty whole grain bread can add depth to your grilled cheese experience.
If you want to add some heat to this grilled cheese, consider adding some cayenne pepper into the center.
You can substitute the sharp cheddar cheese for your favorite variety, like American, provolone, or even Pepper Jack.
