Heat a skillet or griddle over medium-low heat.
Butter the outer sides of the bread slices.
Flip the bread and place a slice of cheddar cheese on each of the bread slices.
Spread a generous amount of the pimento cheese mixture, about 4 ounces, onto one slice of bread.
Close the sandwich and place it, buttered sides down, onto the skillet or griddle.
Cook the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
Once both sides are golden brown and the cheese is melted, remove the sandwiches from the skillet. Allow the sandwiches to cool for a minute or two before slicing them in half. Serve hot and enjoy the gooey, cheesy goodness of this Pimento Grilled Cheese!
