Sally’s Nightshade Dip

Ingredients

  • 1 ripe avocado
  • ½ cup Greek yogurt 
  • ¼ cup fresh parsley
  • ½ ounce ranch seasoning packet (half the packet) 
  • Juice of half lemon 

Instructions

  • Scoop the avocado into a food processor. Add the Greek yogurt, fresh parsley, lemon juice and Ranch seasoning. Blend until smooth. Some larger pieces of parsley are okay.
  • Scoop the dip into a bowl, cover and refrigerate for 30 minutes. Allow the dip to set and flavors to develop. 
  • Serve with vegetables or crackers.

Notes

  • Tastes like a ranch dip but fresher with the addition of fresh parsley and avocado.
  • Adjust the seasoning as necessary. 
  • Seal any leftovers in an airtight container and refrigerate for up to three days.
