In a serving bowl or platter, lay the baby kale on the bottom. Follow by adding the watermelon chunks.
Add the red onion, goat cheese crumbles and parsley on top of the watermelon in a visually appealing and even way.
To make the dressing, stire the olive oil, lime zest, lime juice, and honey in a small bowl until combined. Add salt and pepper to taste.
Drizzle the olive oil mixture over the watermelon salad evenly. You can toss to combine if you would like.
Optional: Allow the salad to chill in the refrigerator for 20-30 minutes to allow the flavors to combine.
