    Watermelon Goat Cheese Salad

    This Watermelon Goat Cheese Salad is a refreshing and delightful summer salad. The fresh watermelon is the star of the show, but it is brightened up with the salty goat cheese crumbles and olive oil dressing. The baby kale adds some greens and roughage to this dish in the best way. This is a great way to use up leftover watermelon. Serve as a side at a picnic or as a delicious summer snack.

    This salad comes together quickly with just a few simple ingredients: watermelon, baby kale, goat cheese, red onion, parsley, olive oil, lime, honey, and a little bit of salt and pepper. It's a great way to use up leftover watermelon.

    In a serving bowl or platter, lay the baby kale on the bottom. Follow by adding the watermelon chunks. Then add the red onion, goat cheese crumbles and parsley on top of the watermelon in a visually appealing and even way.

    Make the dressing by combining the olive oil with the lime juice, lime zest, and honey. Salt and pepper to taste.

    Drizzle the olive oil mixture over the watermelon salad evenly.

    Optional: Allow the salad to chill in the refrigerator for 20-30 minutes to allow the flavors to combine.

    You will need the following ingredients: 
    watermelon, baby kale, goat cheese, red onion, parsley, olive oil, lime, honey, and a little bit of salt and pepper.

    What are the storage instructions?

    Cover the leftover salad or place in an airtight container and refrigerate for up to 2-3 days depending on how ripe the watermelon is. We would recommend enjoying this dish right away. 

    Should I eat these warm or cold?

    This Watermelon Goat Cheese Salad is best served chilled or room temperature.

    Notes:

    • You can use store bought watermelon chunks or you can cut your own. Use a lot of caution when cutting a whole watermelon. This salad is a great way to use up any leftover watermelon. 
    • You can drizzle this salad with a little extra honey and even some Tajin seasoning for a spicy/sweet combo.  
    • If you want to substitute the goat cheese for a different kind, we recommend Feta cheese or burrata. 
    • The baby kale can be substituted for your favorite greens. We would use baby spinach or a spring mix that includes arugula.

    Watermelon Goat Cheese Salad

    Ingredients

    • 2 cups watermelon, cut into bite sized pieces
    • 2 cups baby kale
    • ½ goat cheese, crumbled
    • ¼ cup red onion, sliced
    • 1 tablespoon parsley, finely chopped
    • 2 tbsps olive oil
    • Zest of 1 lime
    • Juice of 1 lime
    • 1 teaspoon honey
    • Salt and black pepper, to taste

    Instructions

    • In a serving bowl or platter, lay the baby kale on the bottom. Follow by adding the watermelon chunks. 
    • Add the red onion, goat cheese crumbles and parsley on top of the watermelon in a visually appealing and even way. 
    • To make the dressing, stire the olive oil, lime zest, lime juice, and honey in a small bowl until combined. Add salt and pepper to taste.
