Servings: 2 servings/8 oz. per bowl
- 16 ounces cottage cheese
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1 banana, sliced
- ½ cup raspberries
- ¼ cup almond butter
- Honey drizzle
Place the cottage cheese into a food processor or blender. Add the vanilla extract and honey.
Blend the cottage cheese for 1-2 minutes until the mixture is smooth and all of the curds have blended out.
Divide the cottage cheese evenly into two bowls and begin to add the toppings.
Add the banana slices, raspberries, almond butter and an extra drizzle of honey on top. Enjoy
- Feel free to choose whatever toppings make you happy. Other options include blueberries, slice strawberries, peanut butter, chia seeds, drizzled honey.
- If you want a less sweet Whipped Cottage Cheese Bowl, you can omit the honey and vanilla extract when you whip it. You can even experiment with making it savory by adding topping like tomato, pesto sauce, etc.
- If you are going to store any uneaten portions, be sure to separate the toppings out and store them separately to make the cottage cheese last longer. And be sure to give it a good store before eating it again.
