    Watermelon Feta Skewers

    This Watermelon Feta Skewers recipe is a crowd favorite. Easy to prepare, easy to assemble, and fun to eat! They're great for cookouts, barbecues, and summer potlucks. These single serving skewers are an easy win.

    You can switch out the spinach leaves with basil leaves or mint leaves based on your preference. Or you can alternate different leaves on the skewer for different taste profiles.

    In a small mixing bowl, whisk together the olive oil, honey, lime juice and zest.

    Cut the watermelon into 10, ¾ inch cubes. Cut the feta cheese into the same sized, ¾ inch cubes, 10 of them.

    Begin to assemble the skewers by taking a large toothpick and adding a folded spinach leaf at the end. Then place a watermelon cube next, followed by a feta cube. End the skewer with another folded spinach leaf. Repeat this to the remaining 9 skewers.

    Drizzle some lime olive oil glaze over the top of the skewers and a sprinkle of coarse salt.

    You will need the following ingredients: 
    Seedless watermelon, feta cheese in brine, baby spinach leaves, olive oil, honey, a lime, coarse salt

    What are the storage instructions?

    Place leftover skewers into an airtight container and eat within 2 days. 

    Should I eat these warm or cold?

    These Watermelon Feta Skewers are best served fresh as soon as they are assembled or slightly chilled out of the fridge.

    Notes:

    • You can switch out the spinach leaves with basil leaves or mint leaves based on your preference. Or you can alternate different leaves on the skewer for different taste profiles.
    • These skewers are best served fresh. However, you can prep the ingredients the night before to make assembly easier the next day.
    • The olive oil glaze can be optional, but we find that it adds a really nice acidity to the dish.
