These Air Fryer Chicken and Cheese Taquitos are a delicious and healthy twist on traditional taquitos. The chicken filling is mixed with green chilis and rolled up in soft corn tortillas. Store these Chicken Taquitos in the refrigerator on a covered dish for up to 5 days. These also freeze very nicely, just place them in an airtight container or freezer bag for up to 3 weeks.
These are best served right out of the air fryer while the inside is hot and the cheese melted.
Notes:
- Heating the tortillas is an important step. Warm them in the microwave for 30 seconds and immediately begin to fill and roll. The tortillas will begin to crack and separate otherwise.
- Make sure to coat all sides of the air fryer basket with cooking spray, so that the taquitos don’t stick to the bottom when you try to get them out.
- Serve with your favorite toppings. We love guacamole, green and red salsa, sour cream, cilantro, shredded cheese, cotija cheese, and avocado.
- These taquitos are super easy to reheat and keep well in the fridge or freezer. Reheat by spraying with a layer of cooking spray and placing in the microwave until warmed.
- We love using rotisserie chicken for this recipe, especially leftover chicken. But you can use whatever kind of chicken you have on hand.
- Corn tortillas are perfect for this recipe, but flour tortillas can also be used.
- These can be filled with lots of different foods, like corn, cotija cheese, grilled peppers, onion.
Air Fryer Chicken and Cheese Taquitos
Ingredients
- ½ pound rotisserie chicken
- 1 4 ounce can green chilis
- ½ cup Mexican cheese blend
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 6 small corn tortillas
- Cooking spray
Optional toppings:
- Shredded cheese
- Salsa
- Sour Cream
- Guacamole
- Avocado
- Cotija cheese
Instructions
- Preheat your air fryer to 400°F (200°C).
- Heat the tortillas in the microwave for 25-30 seconds. This will make them more pliable so that they don't won’t crack.
- In a bowl place the chicken, green chili, salt, and pepper and mix well until combined evenly. Break the chicken up while mixing.
- Lay out the tortillas and place a spoonful of the chicken mixture on each one, spreading it out in a thin layer. Add some cheese on top.
- Roll up each tortilla tightly into a taquito shape and place them seam-side down on a plate.
- Spray the taquitos with cooking spray to coat them evenly. Spray the inside of the fryer basket with cooking spray, as well.
- Place the taquitos in the air fryer basket in a single layer and cook for 9-10 minutes or until they are golden brown and crispy.
- Serve the taquitos hot with your favorite toppings such as shredded cheese, salsa, sour cream, or guacamole.
