You will need the following supplies:

Store in the refrigerator for up to 3 days but do not add toppings until you are about to consume. They will get soggy otherwise.
These Banana Chia Overnight Oats are best served chilled, right out of the refrigerator.
Notes:
- We highly recommend using canned coconut milk for an extra strong flavor, but you can substitute with the kind from the carton. You may only need ½ cup if using something other than canned.
- Feel free to substitute the milk with dairy, oat, or almond milk if you do not like coconut.
- The oats will be quite thick and the chia seeds will absorb the milk as well. It will be a thick pudding. You can mix in additional milk to prior to eating if prefer a thinner consistency.
Banana Chia Overnight Oats
Ingredients
- ½ cup rolled oats
- ¾ cup canned coconut milk
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 banana, sliced
- 1 tablespoon honey
Instructions
- Combine the rolled oats, coconut milk, chia seeds, vanilla extract, and salt in a medium mixing bowl. Stir well so all the ingredients are mixed together.
- Cover and chill overnight in the refrigerator for approximately 10-12 hours.
- Remove the oats from the refrigerator when you are ready to eat. In a smaller container, scoop half of the oats followed by half of the banana slices. Layer the remaining oats and top with the rest of the banana slices.
- Drizzle with honey and additional chia seeds and enjoy.
