    Banana Chia Overnight Oats

    Banana Chia Overnight Oats are a delicious take on the classic breakfast. Canned coconut milk is used for a more intense and creamy coconut flavor, and the oats are finished off with sliced banana and a drizzle of honey. It’s the perfect start to any day.

    What will I need to complete this recipe?

    You will need the following ingredients: 
    rolled oats, canned coconut milk, chia seeds, vanilla extract, salt, a banana, honey
    You will need the following supplies: 
    a medium size mixing bowl

    What are the storage instructions?

    Store in the refrigerator for up to 3 days but do not add toppings until you are about to consume. They will get soggy otherwise.  

    Should I eat these warm or cold?

    These Banana Chia Overnight Oats are best served chilled, right out of the refrigerator.

    Notes:

    • We highly recommend using canned coconut milk for an extra strong flavor, but you can substitute with the kind from the carton. You may only need ½ cup if using something other than canned.
    • Feel free to substitute the milk with dairy, oat, or almond milk if you do not like coconut.  
    • The oats will be quite thick and the chia seeds will absorb the milk as well. It will be a thick pudding. You can mix in additional milk to prior to eating if prefer a thinner consistency.

    Ingredients

    • ½ cup rolled oats
    • ¾ cup canned coconut milk 
    • 1 tablespoon chia seeds
    • 1 teaspoon vanilla extract 
    • Pinch of salt
    • 1 banana, sliced
    • 1 tablespoon honey

    Instructions

    • Combine the rolled oats, coconut milk, chia seeds, vanilla extract, and salt in a medium mixing bowl. Stir well so all the ingredients are mixed together. 
    • Cover and chill overnight in the refrigerator for approximately 10-12 hours. 
    • Remove the oats from the refrigerator when you are ready to eat. In a smaller container, scoop half of the oats followed by half of the banana slices. Layer the remaining oats and top with the rest of the banana slices.
    • Drizzle with honey and additional chia seeds and enjoy.
