    Avocado Toast with Tomato

    This Avocado Toast with Tomato recipe is the perfect quick breakfast. Mashed, lime- infused avocado is topped with juicy cherry tomatoes, and feta cheese all on crisp toast. The balsamic glaze ties all these delicious flavors together and gives the perfect tangy touch. This well balanced toast will keep you full until lunchtime while you enjoy every bite.

    Instead of cherry tomatoes, you can use grape tomatoes, heirloom tomatoes, Roma, or the tomatoes of your choice. There is no wrong answer here. We used Italian bread in this recipe, but sourdough is a great option also. Any sturdy bread will be great for this recipe.

    Drizzle the olive oil over the two slices of bread and toast until the bread is nice and crispy. In a mixing bowl, place the halved and seeded avocado along with the lime juice and salt and pepper. Mash the avocado combining the lime juice and salt and pepper. The consistency should be chunky.

    Place one half of the avocado mixture on each slice of bread. Add half of the tomatoes on top of the avocado. Sprinkle the crumbled feta cheese on top of the tomatoes.

    Finally, drizzle Balsamic glaze over the whole toast. Adjust the seasoning with salt and pepper. Enjoy!

    We love the saltiness the feta brings to this toast, but it can be omitted or substituted for whatever cheese you like. We would recommend goat cheese or Parmesan.

    Leftover toast can be placed in an airtight container and stored in the refrigerator for up to 1 day. The lemon juice will help to preserve the avocado but may turn a little brown if not stored in an airtight container.

    Ingredients

    • 1 large avocado or 2 small avocados 
    • 1 tablespoon olive oil
    • Juice of 1 lime
    • Salt and pepper to taste
    • ½ pint cherry tomatoes, halved
    • ¼ cup feta cheese, crumbled
    • 2 slices bread (Sourdough, Italian, Whole Grain)
    • Balsamic glaze
