These Peanut Butter Brownie Parfaits are as indulgent as they are easy to make. Layers of fudgy brownie, creamy peanut butter, and a vanilla yogurt cream topped with chopped peanut butter cups, perfectly come together for this dessert. What flavors pair better than the classic chocolate and peanut butter combo? With the addition of this velvety vanilla cream, this parfait will be a total hit.
For the brownies, you can use store bought ones, a brownie mix version, or you can make fresh brownies using your favorite recipe. Whatever you choose will make for a delicious parfait.
In a medium sized mixing bowl, combine the heavy whipping cream and sugar. Using a mixer, beat the cream until stiff peaks form, about 2 minutes. It should look smooth and not grainy. Add the vanilla Greek yogurt into the whipped cream and gently fold it in until just combined. Be sure not to over-mix. Place the peanut butter in a microwave safe dish and heat in the microwave in 30 second increments until the peanut butter has become loose. It should easily be able to run off of a spoon.
Begin to assemble the parfait by taking two 12-ounce glasses and adding a layer of chopped brownie to the bottom.
Next add about one tablespoon of peanut butter over the brownie layer. Then add a layer of the cream. Repeat this process one more time starting with the brownie layer.
Top the final cream layer with some chopped peanut butter cups and enjoy!

Notes:

- For this recipe, we used creamy peanut butter, but you can try it with crunchy for some extra texture. Just make sure to warm it up so that it assembles easily.
- Feel free to adjust the ratios of the layers to your liking. If you want more or less peanut butter or brownie or cream. Just don’t skimp on the peanut butter cup topping. Yum!
- For the vanilla yogurt cream, make sure to not over whip the whipped cream base. It will start to look dense and grainy. If this happens just add a tablespoon of heavy cream and gently stir it together.
- Also, gently fold in the Greek yogurt. We do not want to over-mix this either, as it will not be stable. The consistency should look smooth and be almost pudding like.
- These desserts are pretty large, you can put them in smaller, 6 ounce containers to double the amount of parfaits.
