    Pancake Tacos

    These Pancake Tacos are a really fun way to spice up your usual breakfast routine. Buttery scrambled eggs and golden sausage are cradled in a pillowy, fluffy pancake. Each bite of these tacos give you  a perfect ratio of eggs, sausage, cheese and pancake. It's a fun take on “taco day" with these Pancake Tacos!

    For the pancakes, you can either use a frozen store-bought variety or make your own using your favorite pancake mir or from scratch with your favorite recipe. There is no wrong way, they will be delicious no matter what.

    In a medium sized mixing bowl, crack the eggs and season with salt and pepper. Whisk the eggs until they have fully combined.

    In a large skillet over medium heat-low, heat 2 tablespoons of butter until it has melted. Add in the eggs and allow them to cook while scrambling them. While the eggs are cooking, in the same skillet, heat the sausage links according to the package instructions.

    Before assembling the pancakes, butter them on one side. Next add some scrambled eggs. Then cut the sausage links into pieces and layer them on top of the scrambled eggs. Top with the shredded cheddar cheese and garnish with some chopped green onion.

    Serve them while the eggs and sausages are hot and the pancakes are pillowy. Drizzle a little maple syrup on top for a little bit of sweetness.

    What will I need to complete this recipe?

    You will need the following ingredients: 
    pancakes, eggs, butter, salt, pepper, sausage links, shredded sharp cheddar cheese, chopped green onion

    What are the storage instructions?

    Place any leftover tacos in an airtight container and refrigerate for up to three days. To reheat the tacos, microwave them until heated through. 

    Should I eat these warm or cold?

    These Pancake Tacos are best served hot, when the pancakes are still warm and pillowy and the eggs and sausage are hot. 

    Notes:

    • For the pancakes, you can either use a frozen store-bought variety or make your own using your favorite pancake mir or from scratch with your favorite recipe. There is no wrong way, they will be delicious no matter what. 
    • The sausage variety is completely your preference, you can use tradition or turkey sausage or even plant based sausage. 
    • Your eggs may cook before the sausage has finished cooking. If that is the case, you can remove it from the skillet and just keep it under a covered plate. 
    • If you want the cheese to be really melted, you can sprinkle it right into the eggs as they are just finished cooking on the skillet. 
    • Feel free to adjust the ratios of eggs and sausage. Make more or less of either depending on what you like.

    Ingredients

    • 4 pancakes, 4-5 inches each
    • 4 eggs
    • Salt and pepper to taste
    • 3 tablespoon unsalted butter
    • 4 sausage links
    • ¼ cup shredded sharp cheddar cheese
    • Chopped green onion, garnish (optional)

    Instructions

    • Prepare your pancakes and then set aside under a covered plate. 
    • In a medium sized mixing bowl, crack the eggs and season with salt and pepper. Whisk the eggs until they have fully combined. 
    • In a large skillet over medium heat-low, heat 2 tablespoons of butter until it has melted. Add in the eggs and allow them to cook while scrambling them. 
    • While the eggs are cooking, in the same skillet, heat the sausage links according to the package instructions. 
    • Begin to assemble the pancake tacos by buttering the pancakes. Next add some scrambled eggs. 
    • Cut the sausage links into pieces and layer them on top of the scrambled eggs. Top with the shredded cheddar cheese and garnish with some chopped green onion.
    • Enjoy these pancake tacos immediately!
